Thai Coconut Soup Recipe from I Love Juice Bar

This month we've been talking about all the amazing (and delicious) things to do with coconut! This easy recipe uses one of our favorite smoothies, Coco Pro. Made with fresh young coconut, coconut water, hemp seed, and probiotics, you might not think something so sweet and delicious would translate well to soup... but this recipe just might pleasantly surprise you!

Our owner Vui came up with this recipe, pulling inspiration from Thai and Vietnamese cuisines to create a super-simple soup that will not only fill you up but satisfy your soul!

Ingredients:

1 Coco Pro minus probiotic
1/4 cup water
3 Tbs lemon juice
2 tsp sesame oil
2 tsp GF soy sauce
1 tsp honey
1/4 tsp salt
1 Tbs sesame seeds
1 tsp chopped garlic
1 tsp chopped ginger
1 Tbs cilantro
1 tsp sesame seeds
1/4 tsp red pepper flakes
Pinch of black pepper

method:

Combine ingredients in a blender except for the last 4 ingredients, blend well until creamy smooth. 

Transfer to a pot.

Warm up slowly on the burner but not to a boil to prevent from burning.

Pour into a bowl & topped with sesame seeds, cilantro, red pepper flakes & a pinch of black pepper.

Enjoy hot or cold!  

Want it spicy? Add sriracha, chili garlic sauce or fresh sliced jalapeño.
